What is the difference between Monofloral and Polyfloral Honey?

Monofloral honey is produced primary by the nectar of a single plant, for example Acacia, Sunflower, Rapeseed, etc.  It is usually named after this plant or tree.

Polyfloral Honey contains nectar from a varieties of blooming at the same time flowers, fruit trees, herbaceous and other melliferous plants.
