Raw Organic Certified Thistle Honey
Thistle Honey made from nectar gathered by bees from the distinctive purple blossoms of milk thistle plant.
Carefully handled from hive to jar without pasteurisation, blending or fine filtration, so the honey retains its naturally occurring pollen, enzymes and plant-derived compounds.
Taste: Thistle honey is very aromatic with medium sweetness and a fresh floral taste.
Pairing: Milk Thistle Honey is excellent for pairing with fresh cheeses like ricotta, chèvre, and fruits such as oven-roasted apples, and pears.
About the Milk Thistle Plant
Milk thistle (Silybum marianum) is a distinctive Mediterranean plant recognised by its striking purple flowers and characteristic white-veined leaves. It has a long history of traditional herbal use, particularly in connection with liver health.
The plant is best known for silymarin, a naturally occurring complex concentrated primarily in its seeds. Silymarin has been extensively researched for its antioxidant and potential liver-protective properties, including its interaction with oxidative stress and liver cells. During flowering, milk thistle also produces nectar-rich blossoms that are highly attractive to bees.

If you find the crystallised honey difficult to use, you can gently warm the jar in a warm water bath to return it to a liquid state.
For optimal storage, we recommend keeping your honey at room temperature. Storing it in a cooler environment can speed up the crystallisation process.
