Avocado, Cashew and Dates Cake by Real Raw Honey

Looking for a healthier alternative that’s both delicious and satisfying? Look no further than this incredible Raw Avocado, Cashew, and Dates Cake!

This cake is a guilt-free indulgence. 

Ingredients:

  • 1 cup of cashews
  • 1 cup of pitted dates (about 13-14)
  • 1 avocado
  • Juice of 1/2 a lemon
  • 3 tbsp of coconut oil
  • 2 tbsp of honey
  • Coconut flakes for garnish 

How to make:

  • In a food processor, mix cashews and pitted dates until well combined.
  • Press the mixture into a cake pan and smooth the top.
  • Place in the fridge to cool for 10 minutes.
  • In a blender, blend the avocado, lemon juice, 3 tbsp of coconut oil, and 2 tbsp of honey until smooth.
  • Remove the cake from the fridge and spread the avocado cream on top of the cashew and date mixture. Smooth with a spatula.
  • Garnish with coconut flakes and place back in the fridge for another 30 minutes to set.
  • Once chilled, remove from the fridge and enjoy this super easy and healthy cake with a drizzle of raw honey. Enjoy!
